Northeast Meats Southwest Texan Buffalo Wings

Smoke wings low and slow over mesquite smoke, about 1-2 hours.
Remove and toss in a buffalo wing sauce

KC Style BBQ Sauce

Mince onions and sautee in canola oil.
Add ketchup, white vinegar, brown sugar, chili powder (a mix of cayenne, cumin, garlic powder, and oregano will do), stout beer.
Cook and stir until thoroughly blended.
May be thickened by adding a premixed combination of a small amount of flour and water.

B-ribs

Buy a crosscut beef brisket strip with bones, these are sold for chulent in many supermarkets (Hazeh Bakar im etzem).
Season with salt and pepper, smoke low and slow for about 6 hours over mesquite or cherry coals.
Optionally toss in BBQ sauce before serving.
